Mung Beans

Also known as bean sprouts or moong beans. Primarily used for sprouting, when the beans are germinated, the sprout grow from the bean into a thin, white to ivory shoot with two small yellow leaves.

Mung bean sprouts can be cooked or eaten raw. Mung beans have a sweet and mild bean flavour. Used in many South-east Asian and Asian dishes, they can be blended into smoothies, tossed into salads, or layered into sandwiches and wraps for enhanced texture. The sprouts can also be steamed or stir-fried into rice and noodle dishes or mixed into soups and curries.

Mung Beans are a powerhouse of nutrients with dietary fibre, folate, vitamins K, C and B, phosphorus, manganese , magnesium, zinc, copper, potassium, and iron.

1. Rinse your beans. Use a colander or strainer to thoroughly rinse your mung beans with a low ration Hydrogen Peroxide water solution , until the water runs clean. Remove any broken beans and debris you might find.
2. Soak your beans. Soak your beans for 24 hours in a breathable container at room temperature in clean water until they swell. You can add a few drops of Food Grade Hydrogen Peroxide to the initial soaking solution to clean water.
3. Drain the beans. After the soak time has passed, remove any mung beans or debris that is floating and drain the water from the beans.
4. Store your beans. Store your germinating mung beans in a dark place, away from direct sunlight in a partially covered container.
5. Repeat the rinsing and draining process. Depending on the temperature and humidity of your grow area it may take anywhere from 2-7 days for the beans to sprout and grow. Check on your mung bean sprouts daily and rinse them with clean water and a strainer one or twice each day, making sure they stay moist but not soaked.
6. Enjoy your spouts. Ideally the mung beans white root should be between 1-3 cm long and then they will ready to be eat. If you do not use your mung bean sprouts immediately store them in a airtight container in the fridge for up to 4 days.

Growing Notes:

Watch the mung beans closely while sprouting. If any mouldy spots appear, remove them immediately. If you have Hydrogen Peroxide available, spray the infected spot with the solution.
